Bread for breakfast

I am a big fan of Emma Porter (@paleowithmrsp on Instagram and www.thelowcarbkitchen.co.uk). Emma is a food writer and recipe developer who has used her own experiences of riding the blood sugar rollercoaster as a Type 1 diabetic to produce an excellent low carb cookbook. She writes that “life is too short not to eat nice food”. Agreed.

If you don’t have time for eggs, eating protein for breakfast can seem like an insurmountable hurdle. Grabbing a quick piece of toast can seem appealing. A discussion about gluten is for another day, but my focus is always on getting the maximum return on ingestion i.e. focusing on delicious and nutritious ways to eat.

Emma has created a fantastic super seed bread which is ridiculously easy to make. You can use your loaf tin purchased during Lockdown for the banana bread! Each slice contains 8g of protein, so you are well on your way to meeting your 20-25g breakfast target. I use the bread as a base for mackerel pȃté (see photo), nut butter, salmon with horseradish sauce and (of course) smashed avocado with chilli flakes and pumpkin seeds. Emma also has low carb hazelnut chocolate spread (at page 71), if you prefer.
